Your menu includes ……Loaded Nachos
Picadillo
1 lb. Ground beef 80/20
1 ea. Small white onion, small dice
1 ea. Small Green pepper, small dice
4 ea. Garlic cloves, finely chopped
2 T Chili powder
1 tsp. Cumin powder
3 T Cholula Hot Sauce
2 T Ketchup

Cheese Sauce
2 lb. package Velveeta Cheese
2 cups Whole Milk
4 oz. Cream Cheese
1 cup Sharp Cheddar Cheese, Shredded
1 tsp. Cayenne Pepper

Other Ingredients needed
1 ea. Large tomato, seeded, small dice
1 bunch Green onion, thinly sliced
1 can Black beans, drained & rinsed
1 ea. Ripe Hass Avocado, small dice
1 ea. Jalapeno
1 bag Tortilla Chips (LARGE)
1 ea. Fresh Lime
4 oz. Sour Cream

Now let’s get cooking!

PICADILLO PREP-
Pre-heat a Non-stick pan to medium-high fire on your stove.
Add the ground beef and flatten it using a wooden spoon. Now move the beef around, while breaking it to smaller pieces. Cook for about 7-8 minutes or until most of the fat has rendered. Lower the heat to medium and ADD the onions, peppers and garlic and cook for 5-6 more minutes. Now add the rest of the PICADILLO ingredients and continue cooking for another 5-6 minutes. (This is a quick preparation, should be done under 20 min)

Cheese Sauce Prep-
Add all ingredients to a medium sauce pot and melt/cook for about 10 minutes, or until it reaches a slow simmer. Now cover with lid and reserve for plate-up.
